Tender Braised Pork Ribs (Dwaeji Galbi Jjim)
How to Make Delicious Braised Pork Ribs
Here’s a recipe for braised pork ribs that everyone will love! 🙂
Main Ingredients
- Pork ribs, about 1200g
- 2 small potatoes
- 1 king oyster mushroom
- A little bit of radish (cut for braising)
- 1 handful of whole garlic cloves
- 1 handful of green onions
Seasoning Ingredients
- 9 Tbsp soy sauce
- 4 Tbsp sugar
- 3 Tbsp minced green onion
- 1.5 Tbsp minced garlic
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp sesame oil
- A little bit of sesame seeds
- A pinch of black pepper
- 3 cups (600ml) water
- 9 Tbsp soy sauce
- 4 Tbsp sugar
- 3 Tbsp minced green onion
- 1.5 Tbsp minced garlic
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp sesame oil
- A little bit of sesame seeds
- A pinch of black pepper
- 3 cups (600ml) water
Cooking Instructions
Step 1
Rinse the pork ribs under cold water for about 10 minutes to remove excess blood. Place the ribs in a pot, cover with water, and add a little cooking wine (or soju), some white parts of green onions, and a few garlic cloves. Bring to a boil, then simmer for 5 minutes to remove impurities. Discard the water. This step is crucial for a clean, less gamey flavor.
Step 2
While the ribs are parboiling, prepare the vegetables. Peel and cut the potatoes into large chunks. Trim the ends of the king oyster mushroom and cut it into large pieces. It’s convenient to prepare the vegetables while the ribs are being parboiled. In a bowl, combine soy sauce, sugar, minced green onion, minced garlic, plum extract, sesame oil, and black pepper. Mix well to create the delicious seasoning sauce.
Step 3
Rinse the parboiled pork ribs thoroughly under cold running water to remove any remaining impurities. Place the rinsed ribs back into the pot. Pour in all the prepared seasoning sauce and add 3 cups (600ml) of water. Bring to a boil over high heat. Starting with high heat helps the flavors to penetrate the meat.
Step 4
Once the liquid comes to a boil, reduce the heat to medium-low. Add the radish, whole garlic cloves, and green onion to the pot. Cover with a lid and simmer for about 20-30 minutes, or until the pork ribs are about halfway tender. Braising them until tender is key to a delicious dish. Baste the ribs with the sauce occasionally to ensure even flavor distribution.
Step 5
When the pork ribs are about halfway cooked, add the prepared potatoes and king oyster mushrooms. Cover again and continue to simmer for another 15-20 minutes, or until the potatoes are tender and cooked through. Once the potatoes are cooked and the sauce has slightly reduced to a desirable consistency, turn off the heat. Garnish with sesame seeds and serve hot. Enjoy with a bowl of steamed rice!
