Tender Beef Curry: A Hearty and Nutritious Golden Delight
Crafting a Delicious Beef Curry Using Yellow Vegetables for Health and Flavor
The concept of ‘five colors’ in food, or ‘Oseik’ (五色), goes beyond mere visual appeal, representing a harmony of flavors and nutrients based on the Five Elements theory. Today, we’re focusing on the ‘yellow’ theme, known for its ability to boost energy and aid digestion. We’ll create a rich and flavorful curry packed with nutritious beef and sweet vegetables. The natural sweetness of carrots, potatoes, and onions, combined with the savory richness of beef, will create a wonderful meal the whole family can enjoy. Let’s make a delicious curry with plenty of yellow ingredients that help boost immunity and resistance!
Essential Ingredients
- Curry Roux (choose your preferred spice level) 100g
- Beef (for curry or stewing) 150g
- Onion (medium-sized) 280g (approx. 1.5)
- Potato (medium-sized) 100g (approx. 1)
- Carrot (medium-sized) 60g (approx. 1/3)
- Water 700ml
- Avocado Oil (or cooking oil) 2 Tbsp (30ml)
Cooking Instructions
Step 1
Let’s start with a delicious curry! First, dice the beef into bite-sized pieces. If they’re too large, they’ll take longer to cook. Dicing the onion, potatoes, and carrots to a similar size ensures they cook evenly. Peel the potatoes and carrots before dicing.
Step 2
Heat a deep pot over medium heat, then add 2 tablespoons of avocado oil. Once the oil is hot, add the diced beef and stir-fry until it’s nicely browned on all sides. Searing the beef like this helps to lock in the juices, resulting in a more tender and flavorful curry.
Step 3
Once the beef is browned, add the diced carrots, onions, and potatoes to the pot. Stir-fry everything together for about 3-5 minutes over medium heat until the vegetables start to soften and become slightly translucent. This step enhances the natural sweetness of the vegetables, adding depth to the curry’s flavor.
Step 4
After stir-frying the vegetables, it’s time to add the water. Carefully pour in the 700ml of water. Ensure there’s enough water to cover the beef and vegetables; this prevents burning and ensures everything cooks to a tender consistency.
Step 5
Cover the pot with a lid and bring it to a simmer over medium heat. Let it cook for about 10 minutes, or until the vegetables are tender. You can gently stir occasionally to prevent sticking. The vegetables are ready when a fork can easily pierce them.
Step 6
Once the ingredients are cooked, reduce the heat to low. Now, it’s time to add the curry roux. Break apart the curry roux blocks or add them whole, and stir gently with a wooden spoon or ladle until the curry is completely dissolved into the liquid without any lumps. Be careful to prevent the curry from sticking to the bottom of the pot.
Step 7
After the curry roux has fully dissolved and the sauce has thickened, continue to simmer on low heat for another 1-2 minutes. This allows the flavors to meld and the sauce to reach the desired consistency. If it’s too thick, add a little more water; if it’s too thin, let it simmer a bit longer.
Step 8
Your delicious beef curry is finally ready! Serve it generously over warm rice for a truly satisfying meal. The sweetness of the vegetables, the richness of the beef, and the aromatic spices of the curry will create an incredibly delicious dish.
Step 9
Ladle the hot, finished beef curry generously over freshly cooked rice. For an enhanced dining experience, consider serving it with kimchi or pickled radish. Enjoy this hearty and delicious meal with your loved ones!
