Main Ingredients
  • 800g Pork Loin (sliced thinly for Jeon)
  • 1 Red Chili Pepper
  • 1 Cheongyang Chili Pepper (or other hot pepper)
  • Egg Wash (3-4 eggs, pinch of salt)
  • Flour, generously

Seasoning & Cooking Oil
  • Herb Salt, to taste
  • Sunflower Oil or Cooking Oil, generously

Cooking Instructions

Step 1

Prepare the pork loin, sliced thinly for Jeon, which you can get from a butcher. (While not commonly found in large supermarkets, your local butcher or a specialty meat shop can usually slice it for you upon request.) Lay the slices flat on a large tray, sprinkling herb salt lightly on each side as you stack them. This allows the seasoning to permeate the meat as it thaws. Let it marinate at room temperature for about 30 minutes.

Step 2

Crack fresh eggs into a bowl, add a tiny pinch of salt, and whisk until smooth and slightly frothy to create the egg wash. For an even smoother texture, you can strain the egg wash through a sieve.

Step 3

Thinly slice the red and Cheongyang chili peppers, removing the seeds, to be used as a garnish. Slicing them thinly is important, as thick pieces might prevent the meat from cooking evenly.

Step 4

Lightly pat the marinated pork slices dry with paper towels. Then, coat each slice thinly and evenly with flour, shaking off any excess. After coating with flour, dip each piece into the prepared egg wash, ensuring it’s well coated. Make sure the egg wash is not too watery.

Step 5

Heat a pan over medium-low heat and add a generous amount of sunflower or cooking oil. Once the oil is moderately hot, carefully place the egg-coated pork slices into the pan. Then, arrange one or two of the thinly sliced chili peppers attractively on top of each piece of pork. Be mindful of the heat; if it’s too high, the outside may burn before the inside cooks.

Step 6

Once the bottom side of the pork turns golden brown, carefully flip the slices and cook the other side until it’s also golden and lightly crisp. Remove from the pan once both sides are beautifully golden. Avoid overcooking, as this can make the meat tough.

Step 7
