- 1.5 Tbsp whole grain mustard

- 1.5 Tbsp honey

Cooking Instructions
Step 1
First, let’s prepare the delicious carrot remoulade. Wash, peel, and finely julienne the 400g of carrots. Place the julienned carrots into a large mixing bowl.

Add 1/2 tablespoon of salt to the julienned carrots and mix thoroughly with your hands. Let the carrots sit for 15 minutes. This salting process draws out moisture, enhancing their crisp texture and intensifying their natural sweetness.

After 15 minutes, you have a choice on how to use the salted carrots. You can use them directly for a moist remoulade, or squeeze out the excess liquid for a drier, crisper version. Today, we’ll use them directly for a moister remoulade.

In a separate small bowl, combine 1.5 tablespoons of whole grain mustard, 3 tablespoons of olive oil, 1 tablespoon of lemon juice, 1.5 tablespoons of honey, and a pinch of black pepper. Whisk these dressing ingredients together until well combined. Taste and adjust the amount of lemon juice and honey to suit your preference for sweetness and tanginess. You can also add fresh herbs for extra flavor.
