Cooking Instructions

Step 1

First, carefully separate the green grapes from their stems using scissors. This method prevents the grapes from getting crushed and ensures a clean separation. (TIP: Using seedless green grapes makes making jam much easier!)

Step 2

Since we’ll be using the grapes with their skins on, thorough washing is essential. Place the green grapes in a bowl and evenly sprinkle about half a cup of all-purpose flour or baking soda over them. The starch in the flour or the properties of baking soda help to absorb and adhere to dirt, dust, and any potential residues on the grape skins. Let it sit for about 10 minutes to allow the impurities to bind effectively.

Step 3

After 10 minutes, rinse the grapes thoroughly under running water to remove the flour or baking soda. Wash them gently to avoid damaging the delicate grapes.

Step 4

For the sterilization step, fill a bowl with clean water and add 3 tablespoons of vinegar to create a vinegar solution. Submerge the rinsed grapes in this vinegar water for about 10 minutes. The vinegar’s sterilizing effect will provide extra peace of mind.

Step 5

Remove the grapes from the vinegar solution, rinse them one more time with clean water, and then drain them well in a colander. Ensuring the grapes are well-drained will help reduce the cooking time later.

Step 6

Place the drained green grapes into a blender or food processor and blend them smoothly with their skins on. It’s okay if there are a few small chunks remaining; they can add a pleasant texture when bitten into.

Step 7

Pour granulated sugar into the blended grape mixture, using the same amount as the grapes, which is 400g. Sugar acts as a preservative and helps to achieve the right consistency for the syrup or jam.

Step 8

If you’re only making green grape syrup, mix the ingredients well, transfer to a clean jar, and refrigerate. You’ll have delicious green grape syrup ready to enjoy! Mix it with sparkling water for a refreshing green grape soda. (TIP: You can also divide the mixture to make both syrup and jam!)

Step 9

To make the green grape jam, add 1 tablespoon of lemon juice and 1 teaspoon of salt to the green grape and sugar mixture. Stir everything together thoroughly. Lemon juice adds a bright, zesty flavor and helps maintain the jam’s color, while salt enhances the sweetness. Now, you have two cooking options: either use your rice cooker’s ‘Jam’ or ‘Yogurt’ setting (approximately 30 minutes) and repeat it 2-3 times, or transfer the mixture to a pot and simmer over medium-low heat for about 30 minutes, stirring constantly to prevent sticking.

Step 10

As the jam cooks, you’ll notice it becoming clearer and thicker. When you can drag a spoon through it and the mixture momentarily holds its shape, it’s nearing completion.

Step 11

Once completely cooled, the jam will set to a firmer consistency. The skins will naturally break down, resulting in a smooth texture. The jam may also take on a slightly orangey hue as it cools. Store in clean jars in the refrigerator and enjoy your delicious homemade green grape jam!
