Main Ingredients
  • 2 small potatoes
  • 200g sweet potatoes (specifically ‘bam goguma’ – a type known for its sweetness)
  • 1/3 carrot
  • 1/2 onion

Seasoning
  • 1 tsp salt
  • 2 tbsp sunflower oil
  • 1 tbsp sesame oil
  • 1 tbsp toasted sesame seeds

Cooking Instructions

Step 1

First, wash and prepare all the vegetables. Peel the potatoes, slice them thinly (about 0.5cm thick), and then cut them into batons of similar thickness. Peel and julienne the carrot into similar-sized sticks. Peel and thinly slice the onion. Cutting them into uniform strips helps them cook evenly and makes the dish easy for children to eat.

Step 2

Peel the sweet potatoes and cut them into julienne strips, similar in thickness and length to the potatoes. Rinse the cut potatoes and sweet potatoes gently in cold water 1-2 times to remove excess starch. Pat them dry thoroughly before stir-frying for a better texture and taste.

Step 3

Heat a non-stick pan over medium heat and add 2 tablespoons of sunflower oil. Add the drained potato and sweet potato juliennes, along with the carrot juliennes. Sprinkle in 1 teaspoon of salt and add 2 tablespoons of water. Stir-fry for about 3-5 minutes. Adding a little water helps steam the vegetables and prevents them from sticking or burning.

Step 4

Once the potatoes and sweet potatoes are partially cooked and slightly translucent, add the julienned onion. Stir-fry briefly for about 1-2 minutes, just until the onion becomes translucent. Avoid overcooking the onion, as it can become mushy. You want it to be tender-crisp.

Step 5

Check if the vegetables are tender. Cover the pan with a lid and turn off the heat immediately. Let it sit for about 3 minutes. The residual heat will gently finish cooking the potatoes and sweet potatoes, allowing their natural sweetness to intensify. If you find they are still too firm, you can heat them on very low heat for another 1-2 minutes.

Step 6

Uncover the pan, drizzle in 1 tablespoon of sesame oil, and sprinkle with 1 tablespoon of toasted sesame seeds. Mix everything gently to combine. Your delicious sweet potato and potato stir-fry is ready! The fragrant sesame oil and the nutty crunch of sesame seeds make this a hit with kids. Serve warm!
