For the Sweet Potato Jam
- 1-2 medium sweet potatoes, cooked (steamed or boiled)
- 300ml milk
- 4-6 Tbsp sweetened condensed milk (adjust to taste)
- 20g unsalted butter
- 1/2 tsp ground cinnamon (optional, for added flavor)
- A pinch of salt (enhances sweetness)
For the Sweet Potato Sandwich
- 4 slices of bread
- Generous amount of prepared sweet potato jam
- 4 slices of bread
- Generous amount of prepared sweet potato jam
Cooking Instructions
Step 1
Thoroughly wash the sweet potatoes. Place them in a pot with water and boil for about 20-30 minutes, or until they are tender enough to be easily pierced with a fork. Once cooked, let them cool slightly, then peel off the skins using a knife.
Step 2
Cut the peeled sweet potatoes into reasonably large pieces. Place the pieces into a blender or food processor, and add 300ml of milk. Blend until you achieve a smooth, creamy consistency.
Step 3
Take a medium-sized saucepan. Add the blended sweet potato and milk mixture, 4-6 tablespoons of sweetened condensed milk, 20g of softened unsalted butter, and 1/2 teaspoon of ground cinnamon for an aromatic touch.
Step 4
Place the saucepan over low heat. Stir continuously with a spatula, ensuring not to let it stick to the bottom. Cook while scraping the bottom and sides of the pot. Continue cooking until the jam reaches your desired thickness, which should be slightly looser than you think, as it will thicken more as it cools. Add a pinch of salt to enhance the sweetness.
Step 5
Prepare 4 slices of bread for the sandwiches. Use a rolling pin or a clean bottle to firmly press down the bread, flattening it without crushing the edges. This step helps to keep the jam contained and creates a neater shape.
Step 6
On one slice of the flattened bread, spread a generous amount of the prepared sweet potato jam. Make sure to cover the surface evenly, all the way to the edges, for the best flavor in every bite.
Step 7
Place another slice of flattened bread on top to complete the sandwich. Use a cup or a bowl to press down firmly around the edges of the sandwich, simultaneously cutting it into halves. You’ll have cute, half-moon shaped sweet potato sandwiches ready to enjoy!
