  • 1 Kabocha squash (choose a large, plump one)
  • 1 fresh egg
  • 1 cup mozzarella cheese (shredded)
  • 1/2 slice processed cheese
  • Pinch of salt
  • Pinch of black pepper
  • 0.5 Tbsp honey

Cooking Instructions

Step 1

Since this is a healthy snack eaten with the skin, wash the kabocha thoroughly, scrubbing its surface with baking soda or coarse salt. Place the washed kabocha in a microwave-safe dish and microwave for about 2 minutes. This makes it much easier to scoop out the kabocha’s insides.

Step 2

Once removed from the microwave, let the kabocha cool slightly. Then, cut off the top part like a lid. Using a spoon, carefully scoop out the seeds and pulp from inside the kabocha. Be careful not to puncture the bottom of the kabocha while scooping.

Step 3

Crack one fresh egg into the hollowed-out kabocha. Use a fork or toothpick to gently break the egg yolk. Stir to combine the yolk.

Step 4

Now it’s time for seasoning. Sprinkle a pinch of salt over the egg to season it, and add a dash of pepper for extra flavor. Finally, drizzle 0.5 Tbsp of honey evenly over the top for a touch of sweetness.

Step 5

Place the kabocha in the microwave-safe dish and microwave for about 1 minute. This step will partially cook the top of the egg, making it soft. It doesn’t need to be fully cooked yet.

Step 6

Take the kabocha out of the microwave again. Generously sprinkle the prepared mozzarella cheese over the top. Then, tear the 1/2 slice of processed cheese into pieces and scatter it over the mozzarella. Return it to the microwave and cook for another 1 to 1.5 minutes, or until the cheese is melted and the egg is fully cooked.

Step 7

Your warm Kabocha Egg Gratin is ready! Doesn’t the melting cheese, flowing like a waterfall, look incredibly appetizing? :)) Feel free to adjust the amount and type of cheese according to your preference. I tore the remaining half slice of processed cheese into pieces and mixed it with the mozzarella, then placed the other half on top for an even richer cheese flavor. It’s best enjoyed immediately while warm.
