Easy Rice Cooker Chicken Breast Bibim Guksu Recipe

Main Ingredients
- 100g Kalguksu noodles (fresh or dried)
- 40g Chicken breast
- 1/2 Cucumber
- 1/4 Onion
- Sesame seeds
- 1 handful Chopped green onions
Special Bibim Sauce
- 2 Tbsp Soy sauce
- 2 Tbsp Mirin (rice wine)
- 1 Tbsp Vinegar
- 1 Tbsp Sugar
- 1 tsp Gochujang (Korean chili paste)
- 1 pinch Gochugaru (Korean chili flakes)
- 1 tsp Sesame oil
- 2 Tbsp Soy sauce
- 2 Tbsp Mirin (rice wine)
- 1 Tbsp Vinegar
- 1 Tbsp Sugar
- 1 tsp Gochujang (Korean chili paste)
- 1 pinch Gochugaru (Korean chili flakes)
- 1 tsp Sesame oil
Cooking Instructions
Step 1
Thinly slice 1/2 cucumber and 1/4 onion. In a bowl, combine the sliced cucumber and onion with all the ingredients for the ‘Special Bibim Sauce’: 2 Tbsp soy sauce, 2 Tbsp mirin, 1 Tbsp vinegar, 1 Tbsp sugar, 1 tsp gochujang, 1 pinch gochugaru, and 1 tsp sesame oil. Mix well. Marinate this mixture in the refrigerator overnight. This step allows the vegetables to soften slightly while absorbing the flavors, mellowing the onion’s pungency and creating a delicious sweet and sour taste.
Step 2
The next day, prepare about 40g of pre-cooked chicken breast. Shred or finely chop the chicken breast into bite-sized pieces. (Tip: Using leftover rotisserie chicken or pre-boiled chicken breast makes this step even quicker.) Add the prepared chicken breast to the bowl with the marinated vegetables and mix. Let it marinate together for another 10 minutes.
Step 3
Now, let’s cook the kalguksu noodles conveniently using a rice cooker! Place the fresh or dried kalguksu noodles in the inner pot of your rice cooker. Add enough boiling water to completely submerge the noodles. (If the noodles are long, you can break them in half to fit.) Select the ‘Reheat’ function on your rice cooker and let it run for 9 minutes. This will cook the noodles perfectly.
Step 4
Drain the cooked noodles from the rice cooker and rinse them thoroughly under cold running water. This step removes excess starch, resulting in a cleaner flavor, and also cools the noodles down, which is ideal for mixing into a cold dish.
Step 5
Assemble your Bibim Guksu by placing the chilled kalguksu noodles in a serving bowl. Top with the marinated vegetable and chicken breast mixture that you prepared. Add 2-3 tablespoons of the reserved marinade from the bowl to make the dish more moist and flavorful. Finally, sprinkle with sesame seeds and a handful of chopped green onions for a beautiful finish.
