  • 1/2 red chili pepper
  • 1 green chili pepper (optional, for extra spice)
  • 3 Tbsp cooking oil
  • A pinch of sesame seeds

Seasoning Ingredients
  • 1 Tbsp minced garlic
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp cooking wine (mirin or rice wine)
  • 1 Tbsp soy sauce
  • 1/2 Tbsp fish sauce (for umami)
  • 2 Tbsp oligo syrup (or other sweetener, adjust to taste)
  • 100ml water
  • 1 Tbsp sesame oil
  • A pinch of black pepper

Cooking Instructions

Step 1

First, wash the potatoes thoroughly under running water, peel them, and cut them into bite-sized pieces. If the potatoes are too large, they will take longer to cook, so aim for pieces about 2-3cm in size. If you’re using small potatoes, feel free to use 4 of them.

Step 2

Rinse the cut potatoes several times in cold water to remove excess starch. This step is crucial to prevent the potatoes from breaking apart during cooking and will result in a cleaner, more appealing dish. Continue rinsing until the water runs clear.

Step 3

After 5 minutes, remove the lid. You should see that the sauce has thickened slightly. If the potatoes are still not tender enough, add a little more water and continue simmering. It’s important to leave some sauce in the pot, as you’ll be adding the vegetables later.
