Ingredients
  • 1 whole sweet pumpkin (approx. 330g)
  • 2 Tbsp glutinous rice flour
  • 2 Tbsp sugar (adjust to taste)
  • 1/2 tsp salt
  • 1 Tbsp honey (optional, for extra sweetness)

Cooking Instructions

Step 1

Start by adding 1 liter of water to a pot and place a steamer basket inside. Cover the pot and bring the water to a boil until steam begins to rise. Once steaming, carefully place the washed whole sweet pumpkin onto the steamer, cover, and steam for about 5 minutes. This steaming process will soften the pumpkin, making it much easier to handle.

Step 2

After steaming, let the pumpkin cool slightly. Then, cut it into about 8 pieces. Use a spoon to scoop out and discard the seeds from the center. Next, carefully peel the skin off the pumpkin pieces using a knife. You can then cut the peeled pumpkin into bite-sized pieces for easier blending.

Step 3

Place the prepared sweet pumpkin pieces into a blender along with 4 cups of water (approximately 800ml). Blend until it becomes a completely smooth purée. If you don’t have a blender, you can mash the pumpkin with the back of a fork or pass it through a sieve for a smooth texture.

Step 4

Now, let’s prepare the glutinous rice paste. In a separate bowl, combine 2 tablespoons of glutinous rice flour with 1 cup of water (approximately 200ml). Whisk thoroughly with a whisk or spoon until there are no lumps. A smooth paste is key to preventing the porridge from becoming lumpy.

Step 5

Pour the blended sweet pumpkin purée into the pot and bring it to a boil over medium-high heat. Once it starts boiling, reduce the heat to low and simmer for about 5 minutes. Then, slowly pour in the prepared glutinous rice paste while continuously stirring to prevent it from sticking to the bottom of the pot. Continue to cook and stir until the porridge reaches a thick and creamy consistency, which should take about 5 to 7 minutes.

Step 6

Once the porridge has thickened to your desired consistency, it’s time to season it. Stir in 2 tablespoons of sugar, 1/2 teaspoon of salt, and 1 tablespoon of honey if you’d like extra sweetness. Taste and adjust the sugar or honey as needed, as the natural sweetness of the pumpkin can vary.

Step 7

And there you have it – a delicious and nutritious Korean sweet pumpkin porridge is ready! Serve warm and enjoy this comforting dish. It’s perfect as a hearty meal or a sweet, healthy snack.
