Ingredients
  • 15-17 baby potatoes (adjust according to size)
  • 3 cups water (approx. 600ml)
  • 6 Tbsp soy sauce
  • 2 Tbsp mirin (rice wine)
  • 1.5 Tbsp corn syrup (or other liquid sweetener)

Cooking Instructions

Step 1

First, it’s important to wash the baby potatoes thoroughly while keeping the skin on. Use a brush under running water to scrub off any dirt. If there are any bruised or damaged spots on the skin, you can gently trim them away with a knife.

Step 2

Place all the washed baby potatoes into a pot. Next, pour in 6 tablespoons of soy sauce, which will form the base of the flavor.

Step 3

Add 2 tablespoons of mirin (rice wine) to enhance the potato’s flavor and eliminate any unwanted odors. This also adds a beautiful sheen and umami.

Step 4

Now, pour in 3 cups (about 600ml) of water and bring it to a boil over high heat. Cover the pot and let it simmer until the water reduces by about half. This process helps the potatoes cook through to the center. Check the tenderness of the potatoes periodically.

Step 5

Once the liquid in the pot has reduced to about half, stir in 1.5 tablespoons of corn syrup for sweetness. Continue to simmer, stirring occasionally, until the sauce thickens and coats the potatoes beautifully, creating a glossy finish. Your delicious braised baby potatoes are now ready! Enjoy them with a warm bowl of rice.
