Easy Scallion Cheese Bread Recipe | No Proofing, No Yeast, No Kneading! (+Video)
Hello everyone! Today, I’ve made an ultra-simple version of Scallion Cheese Bread. Dough? Nope! Yeast? Nope! Proofing? No way! Just prepare one bowl, and let’s bake together for the third installment of super-simple baking!
Scallion Cheese Bread (for one 22x12cm pan)
- 355ml Sparkling water
- 360g All-purpose flour
- 50g Sugar
- 8g Baking powder
- 3g Salt
- 50g Butter (for batter)
- 35g Minced scallions
- 35g Cheddar cheese
- 10g Mirin
- Minced scallions (for topping, to taste)
- Cheddar cheese (for topping, to taste)
- 30g Butter (for topping)
Cooking Instructions
Step 1
In a microwave-safe container, combine the minced scallions and 50g of butter (for the batter). Microwave for about 1 minute, or until the butter is completely melted. Be careful as it will be hot.
Step 2
Stir the melted butter and scallions together. Let it sit for a moment to cool slightly.
Step 3
Microwave the 30g of butter (for topping) for about 30-40 seconds, until melted. Set aside to cool slightly while you prepare the batter.
Step 4
Preheat your oven to 190°C (375°F). Grease a 22cm x 12cm baking pan well. All your prep is done! The batter comes together in a flash. *Note: The temperatures in the photo are in Fahrenheit!
Step 5
In a large bowl, add the all-purpose flour, baking powder, sugar, and salt. Whisk them together until well combined.
Step 6
Add the cheddar cheese, the melted scallion and butter mixture, mirin, and sparkling water to the bowl. Gently mix with a spatula until just combined – no dry flour should be visible. Avoid overmixing to keep the bread tender.
Step 7
Pour the batter into the prepared, greased pan.
Step 8
Drizzle the melted 30g of topping butter evenly over the batter.
Step 9
Sprinkle with finely chopped scallions or extra cheddar cheese for topping, if desired. This step is optional!
Step 10
Bake in the preheated oven at 190°C (375°F) for about 60-65 minutes, until golden brown and a toothpick inserted into the center comes out clean. Let it cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
