When you’re too tired to cook, this easy recipe for egg fried rice is a lifesaver! Made with simple ingredients, it’s a delicious one-bowl meal. The perfect combination of savory flavors and fluffy scrambled eggs makes this a hit for all ages.
Ingredients
- 2 large eggs
- 1 cup chopped green onions (about 50g)
- 2 Tbsp fish sauce (or 2 Tbsp soy sauce)
- 1 Tbsp sugar
- 1 bowl of cooked rice (about 200g)
- 2 Tbsp cooking oil
Cooking Instructions
Step 1
First, prepare all the ingredients for today’s dish. Wash and thinly slice the green onions. In a separate bowl, whisk the eggs to create an egg mixture. Have one bowl of warm cooked rice ready. (If using cold rice, gently warm it in the microwave for a fluffier texture.)
Step 2
For an even better flavor in your fried rice, try finely chopping the green onions. The fragrant aroma of the green onions will cut through any richness and enhance the umami flavor of the egg fried rice. It’s also excellent for removing any unwanted odors.
Step 3
Heat 2 tablespoons of cooking oil in a pan over low heat. Add the sliced green onions and sauté them slowly to create fragrant scallion oil. As the green onions turn golden brown, they release their aromatic oil, which is the secret to making your fried rice deeply flavorful and rich.
Step 4
Once the scallion oil is sufficiently fragrant, add 2 tablespoons of fish sauce and stir-fry together. If you don’t have fish sauce, you can substitute it with 2 tablespoons of soy sauce. The deep, savory flavor unique to fish sauce will elevate the taste of your fried rice.
Step 5
Add the bowl of warm cooked rice to the pan. Using a spatula, gently mix and stir-fry the rice to coat each grain with the scallion oil and fish sauce. You can easily make delicious fried rice using pre-packaged microwaveable rice as well.
Step 6
Once the rice is well-mixed with the seasonings, push it to one side of the pan. This creates space to cook the scrambled eggs. Doing this avoids using an extra pan, reducing the amount of dishes to wash.
Step 7
Pour the beaten eggs into the empty space in the pan and scramble them. Gently stir the cooking eggs with chopsticks or a spatula to create fluffy scrambled egg pieces.
Step 8
When making the scrambled eggs, it’s important to push the rice firmly to one side and cook the eggs over low heat, being careful not to let them burn. Avoid overcooking the eggs once they start to set.
Step 9
Gently mix the fluffy scrambled eggs with the rice. Stir-fry everything together evenly until well combined. If the fried rice tastes a bit bland, you can adjust the seasoning with a pinch of salt to your preference.
Step 10
To serve, you can plate the finished egg fried rice attractively, or for a neater presentation, pack it tightly into a rice bowl and then invert it onto a plate.
Step 11
This egg fried rice is surprisingly simple to make! While it can sometimes seem ordinary, using fish sauce instead of soy sauce offers a remarkably deeper umami flavor. It’s a satisfying meal that even kids love, perfect for those days when cooking feels like too much effort. Try making it and enjoy a delicious meal!
