- 1 and 1/2 cups soy sauce (approx. 270ml)
- 1/2 cup soju (approx. 90ml, for removing gamey odor)
- 1 cup water (approx. 180ml)
- 1 cup sugar (approx. 180g, adjustable to taste)
- 1 Tbsp sesame oil
- 2.5 Tbsp minced garlic (generous amount)
- 1 and 1/2 cups soy sauce (approx. 270ml)

1. Prepare the vegetables to your liking. Potatoes and carrots are key ingredients that add depth of flavor to Jjimdak. Cutting them into large cubes makes them enjoyable for both children and adults alike, offering a great texture. Feel free to add onions or green onions for extra flavor!

2. Soaking the glass noodles beforehand can shorten the cooking time. Place the glass noodles in boiling water and boil for about 3 minutes. Be careful not to overcook, as they can become mushy. Once boiled, immediately rinse them under cold water to remove excess starch and drain well; this keeps them delightfully chewy.

3. Proper chicken preparation is crucial for delicious Jjimdak! Cut the chicken into bite-sized pieces. If any pieces are too large, you can halve them. To ensure the sauce penetrates deeply, make several shallow cuts into the chicken pieces – this allows the marinade to soak in for maximum flavor. This also helps eliminate any gamey odor from the chicken.

If the sauce tastes too salty, add a little more water. Conversely, if it’s too bland, add a bit more soy sauce to adjust the seasoning. Once the sauce is bubbling vigorously, add the potatoes and carrots, and simmer until the vegetables are tender. Finally, add the soaked glass noodles and cook for a short while longer until the noodles absorb the sauce. Your delicious Jjimdak is now complete!
