Ingredients
  • 600ml of your favorite drink (e.g., fruit juice, soda)
  • 10 tablespoons sugar (adjust to taste)
  • 4 tablespoons cornstarch

Step 1

First, prepare all your ingredients by measuring them out. Using a drink you enjoy will help create a more flavorful and colorful ice cream.

In a pot or bowl, combine the drink, sugar, and cornstarch. Whisk thoroughly until smooth and there are no lumps. It’s important to mix well so the cornstarch doesn’t settle at the bottom.

Place the pot over medium heat. Stir continuously to prevent sticking to the bottom. The mixture will gradually thicken. Cook for about 5-7 minutes until it reaches a pudding-like consistency.

For reference, I used a mix of grapefruit juice and grape juice to add a refreshing and sweet flavor combination. Blending different juices can create a more complex taste profile.

Once thickened, remove from heat. Carefully pour the ice cream base into silicone molds or an ice cube tray. Filling them about 80-90% full is recommended for best results.

Place the filled molds in the freezer for at least 6 hours, or until firm. If using a stainless steel container, you can scrape it with a fork every hour or so after the first few hours to achieve a smoother, sorbet-like texture.
