Got leftover stir-fried kimchi? No worries! This recipe shows you how to whip up a fantastic meal in just 5 minutes with this super simple stir-fried kimchi and cheese fried rice. Perfect for solo diners or busy professionals!
Key Ingredients
- Generous portion of well-stir-fried kimchi (Pork stir-fried kimchi recommended) – about 1/2 cup
- 1 serving of warm cooked rice (approx. 150g)
- 1 slice of cheddar cheese
Cooking Instructions
Step 1
Lightly oil a preheated pan and add the pre-stir-fried kimchi. Sauté for 1-2 minutes over medium heat until fragrant. You’ll start to smell the delicious aroma of the kimchi. (Tip: Using store-bought stir-fried kimchi or homemade pork stir-fried kimchi will add even richer flavor.)
Step 2
Add 1 serving of warm cooked rice to the stir-fried kimchi. Gently break up any clumps of rice and mix it well with the kimchi.
Step 3
Continue stir-frying the rice and kimchi together for 2-3 minutes, using a spatula to mix them gently. The key is to let each grain of rice absorb the savory flavor of the kimchi. Once the fried rice is ready, plate it nicely in a serving dish.
Step 4
Place the slice of cheddar cheese on top of the warm fried rice. Microwave for about 30 seconds to 1 minute, just until the cheese is melted and gooey. This creates a wonderfully creamy and savory cheese topping that makes this fried rice even more irresistible.
