Main Ingredients
  • 1 Zucchini
  • 1/2 Onion

Seasoning & Others
  • 3 Tbsp Perilla Oil or Cooking Oil
  • 1 Tbsp Saeujeot (Salted Fermented Shrimp)
  • 1 Tbsp Anchovy Sauce (optional, for seasoning adjustment)
  • 1 Tbsp Minced Garlic
  • Pinch of Toasted Sesame Seeds

Cooking Instructions

Step 1

First, wash the zucchini thoroughly under running water. Trim the root of the onion and peel off its skin.

Step 2

Slice the washed zucchini into half-moon shapes, about 0.5 cm thick. Slice the onion into thick strips for a pleasant texture when stir-fried.

Step 3

Heat a pan over medium-low heat and add 1-2 tablespoons of perilla oil or cooking oil. Add the prepared zucchini and stir-fry evenly. It’s best to cook until the zucchini becomes slightly translucent and tender.

Step 4

Once the zucchini looks lightly coated with oil, add the sliced onion and stir-fry them together. When the onion begins to turn translucent, it’s time to add the next ingredients.

Step 5

Add 1 tablespoon of saeujeot and 1 tablespoon of minced garlic, and stir-fry together. If the seasoning from saeujeot isn’t enough, add about 1 tablespoon of anchovy sauce or adjust the taste with salt according to your preference. It’s recommended to use only the solids of saeujeot (discarding the liquid) for a cleaner taste.

Step 6

If you prefer a softer texture, cover the pan and cook over very low heat for another 1-2 minutes. If you enjoy a slightly crisp texture, turn off the heat as soon as the zucchini starts to soften.

Step 7

Finally, sprinkle with toasted sesame seeds. The savory aroma and umami of the saeujeot blend beautifully with the natural sweetness of the zucchini, making it incredibly delicious. It’s a mild and savory side dish that both children and adults will love.
