Essential Ingredients
  • 100g minced beef
  • 200g minced pork
  • 1/2 red bell pepper (finely minced)
  • 1/3 onion (finely minced)
  • 1/2 green onion (white part mainly, finely minced)
  • 2 eggs
  • 1/4 paper cup of pancake mix (buchim garu)
  • A little flour (for coating)
  • A little salt (for seasoning)
  • A little black pepper (for seasoning)

Seasoning Ingredients
  • 3 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1/3 tablespoon gochugaru (Korean chili flakes, adjust to taste)
  • 1/2 tablespoon minced green onion
  • A pinch of sesame seeds (for nutty flavor)

Cooking Instructions

Step 1

First, in a bowl, combine the minced beef and minced pork. Season with a little salt and black pepper and mix well by hand. Kneading the mixture thoroughly helps the seasonings penetrate, making it more flavorful.

Step 2

Finely mince the onion, green onion, and red bell pepper. Adding finely chopped vegetables enhances the texture and flavor of the Donggeurang-tteong. (Using a grater or food processor for mincing can be convenient!)

Step 3

To the seasoned meat mixture in the bowl, add the finely minced vegetables and 2 eggs. Pour in 1/4 cup of pancake mix. Mix everything thoroughly by hand until it becomes cohesive and sticky. If the mixture is too wet, add a little more pancake mix. Once it has a good sticky texture, shape it into small, flat, round patties, about bite-sized.

Step 4

Lightly coat the shaped Donggeurang-tteong patties with flour, then dip them evenly in beaten egg. This double coating helps the patties maintain their shape beautifully during cooking and results in a crispier texture.

Step 5

Heat a generous amount of oil in a pan over medium-low heat. Place the coated Donggeurang-tteong patties in the hot oil and cook until golden brown on both sides. Once both sides are a pleasing golden brown, reduce the heat to low, cover the pan for a moment, and cook until thoroughly done. Serve with the pre-mixed seasoning ingredients for dipping.
