Main Ingredients
- 250g prepared sweet potato vines
- 1/3 green onion (optional)
Seasoning for Marinating
- 1.5 Tbsp chili powder
- 1 Tbsp soup soy sauce
- 0.5 Tbsp minced garlic
Stir-Frying Seasoning
- 2 Tbsp cooking oil
- 2 Tbsp perilla seed powder
- 1 Tbsp toasted sesame seeds
- 1 Tbsp perilla oil
- 1.5 Tbsp chili powder
- 1 Tbsp soup soy sauce
- 0.5 Tbsp minced garlic
Stir-Frying Seasoning
- 2 Tbsp cooking oil
- 2 Tbsp perilla seed powder
- 1 Tbsp toasted sesame seeds
- 1 Tbsp perilla oil
Cooking Instructions
Step 1
First, carefully peel off the tough outer skin of the sweet potato vines. If you didn’t buy pre-peeled vines, you can easily remove the skin by blanching them briefly in boiling water before peeling.
Step 2
In a pot, bring plenty of water to a boil with 1 tablespoon of salt. Add the prepared sweet potato vines and boil for about 5 minutes until they soften. Once boiled, rinse them thoroughly under cold water to cool them down. Then, cut them into bite-sized pieces using scissors or a knife, about 2-3 cuts per vine.
Step 3
Place the cut sweet potato vines in a bowl. Add the minced garlic (0.5 Tbsp), soup soy sauce (1 Tbsp), and chili powder (1.5 Tbsp). Gently mix and massage the ingredients into the vines with your hands to marinate, and let them sit for a while.
Step 4
Finely mince the green onion. It adds a nice aroma, but you can omit it if you don’t have any.
Step 5
Heat a wide pan over medium heat and add 2 tablespoons of cooking oil. First, add the minced green onion and stir-fry until fragrant, about 1-2 minutes. Then, add the marinated sweet potato vines and 2 tablespoons of perilla seed powder. Stir-fry together for about 3-5 minutes until the vines become tender. Just before turning off the heat, drizzle in 1 tablespoon of toasted sesame seeds and 1 tablespoon of perilla oil for an extra nutty flavor.
Step 6
Gently toss everything a few more times in the pan to ensure the flavors are well combined. Your delicious stir-fried sweet potato vines with perilla seeds are now ready to enjoy with a warm bowl of rice!
