  • 1 large handful of mixed salad greens
  • 1/2 block of firm tofu
  • 1/4 zucchini
  • 5-6 cherry tomatoes
  • A drizzle of perilla oil (or sesame oil)

Flavorful Oriental Dressing
  • 2-3 Tbsp soy sauce (or seasoned soy sauce)
  • 1-2 Tbsp plum balsamic vinegar
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp olive oil
  • 1 Tbsp sesame oil
  • 1/2 tsp minced garlic
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, dice the tofu into bite-sized cubes, about 1.5 cm. Place the tofu cubes in your air fryer basket, sprinkle lightly with salt and pepper, and air fry at 180°C (350°F) for 15-20 minutes, or until golden brown and slightly crispy. This creates a delightful contrast of textures.

Step 2

Thinly shred the cabbage. To enhance its crispness, soak the shredded cabbage in cold water for a few minutes, then rinse thoroughly several times. Ensure you drain it very well to remove excess water.

Step 3

Wash the salad greens thoroughly under cold running water. After washing, spin them dry using a salad spinner or gently pat them with paper towels. Removing excess moisture is crucial for the dressing to adhere properly.

Slice the zucchini into thin half-moons or your desired shapes, about 0.5 cm thick. Heat a dry skillet over medium-low heat. Add the zucchini slices, sprinkle with salt and pepper, and pan-fry until tender and lightly golden. This brings out the zucchini’s natural sweetness.
