Basic Ingredients
- 260g prepared sweet potato stems
- 2 Tbsp cooking oil
- 1 Tbsp raw sugar (adjust to taste)
- 1 Tbsp soy sauce
- 3 Tbsp fish sauce (for umami)
- 1 red chili pepper (for color and mild spice)
- 50ml water
- 2 small green onions
- 2 Tbsp perilla seed powder (generous amount, key to savoriness)
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, let’s look at the prepared sweet potato stems, weighing 260g. They are already prepped, making them convenient to cook. For tender sweet potato stems, you only need to peel off a little of the tough skin to enjoy them softly.
Step 2
There are two ways to blanch sweet potato stems. You can briefly blanch them in boiling water, or as shown here, pour hot water over them and let them sit for about 5 minutes. Either method works to soften the stems, so please use whichever method is convenient for you.
Step 3
After blanching, rinse the sweet potato stems thoroughly under cold running water at least 3 times. This process removes any raw flavor and helps maintain their crispiness. After rinsing, be sure to squeeze out any excess water.
Step 4
Now, let’s prepare for stir-frying. Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the finely chopped green onions and stir-fry until fragrant. The aroma from the green onions will enhance the flavor of the sweet potato stems.

After 4 minutes, remove the lid and add 1 tablespoon of raw sugar. Raw sugar adds a deeper flavor than regular sugar, making the dish more delicious. If you prefer less sweetness, you can skip this step.

Add 1 tablespoon of soy sauce and 3 tablespoons of fish sauce for added umami. (Alternatively, 2 tablespoons of fish sauce can be sufficient.) Add the thinly sliced red chili pepper for color and a hint of spice. Finally, add 2 generous tablespoons of perilla seed powder, the star ingredient for savoriness.

After adding the perilla seed powder, mix everything well and taste. If it’s too bland, add a little more fish sauce to adjust the seasoning to your preference. (Doorimoon added 2 extra tablespoons of fish sauce to get the seasoning right.)

Once all the seasonings are well combined and the sweet potato stems are tender, turn off the heat.

Lastly, drizzle in 1 tablespoon of sesame oil and mix gently to combine. The nutty aroma of the sesame oil will elevate the dish.

After adding the sesame oil, it’s recommended to cover the pan again and let it sit for about 30 minutes. This resting period allows the flavors to deepen and the sweet potato stems to become even more tender, creating a melt-in-your-mouth texture.
