  • 1 bag Perilla Shoots (approx. 150-200g)
  • 1 Tbsp Korean Soy Sauce (Guk-ganjang)
  • Salt to taste
  • 2 Tbsp Perilla Oil (Deulgireum)
  • A pinch of Sesame Seeds

Cooking Instructions

Step 1

It’s best to prepare and cook fresh vegetables right after purchasing them. If left for too long, they can wilt or become mushy, making them difficult to handle. The same applies to perilla shoots; it’s ideal to trim and cook them immediately.

Step 2

Wash the perilla shoots thoroughly, then prepare to blanch them in boiling salted water.

Step 3

Perilla shoots significantly reduce in volume after blanching. They might seem plentiful initially, but they become a manageable portion once cooked.

Step 4

Add a little salt to boiling water and blanch the perilla shoots for just 1 to 2 minutes. Be careful not to overcook them, as they can become too soft.

Step 5

Immediately after blanching, rinse the perilla shoots under cold water to cool them down. Then, gently squeeze out as much water as possible. Properly draining prevents the dish from becoming watery.

Step 6

Even as you rinse and drain the perilla shoots, their fresh and aromatic scent fills the air, bringing a sense of freshness. This delightful aroma is the charm of stir-fried perilla shoots.

Step 7

Heat 2 tablespoons of perilla oil in a pan over medium heat. Add the squeezed perilla shoots and stir-fry. Add 1 tablespoon of Korean soy sauce and continue to cook. Finally, season with salt to your preference.
