A delightful main dish featuring tender beef bulgogi, chewy octopus, and crisp bok choy. This flavorful stir-fry is perfect for special occasions or a satisfying weeknight meal.
Main Ingredients
- 500g Beef (Bulgogi cut)
- 310g Cooked Octopus
- 1 stalk Scallion (Green onion)
- 4 heads Bok Choy
Marinade
- 1/2 Apple
- 1/2 Onion
- 5 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 2 Tbsp Oligodang (Corn syrup or similar)
- 1 Tbsp Minced Garlic
- 1 Tbsp Maesil Cheong (Plum extract)
- Pinch of Black Pepper
- 2 Tbsp Mirin (or cooking wine)
- 1/2 Apple
- 1/2 Onion
- 5 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 2 Tbsp Oligodang (Corn syrup or similar)
- 1 Tbsp Minced Garlic
- 1 Tbsp Maesil Cheong (Plum extract)
- Pinch of Black Pepper
- 2 Tbsp Mirin (or cooking wine)
Cooking Instructions
Step 1
Gently pat the beef dry with paper towels to remove any excess blood. This step is crucial for a clean, non-gamey flavor. Slice the beef into bite-sized pieces and place them in a bowl.
Step 2
In a blender, purée half an apple and half an onion. Combine this purée with 5 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp sugar, 2 Tbsp oligodang, a pinch of black pepper, 2 Tbsp mirin, and 1 Tbsp maesil cheong to create the flavorful marinade.
Step 3
Add the beef to the marinade and mix well by hand, ensuring every piece is coated evenly. Let it marinate while you prepare the other ingredients.

Once all ingredients are prepped, heat a pan over medium heat and add the marinated beef. Stir-fry, breaking up any clumps, until the beef is mostly cooked.

When the beef is nearly done, add the prepared octopus and sliced scallions to the pan.

Stir-fry quickly over high heat, allowing the flavors to meld and the octopus and scallions to cook through. Keep things moving to maintain a good texture.

Finally, add the cleaned bok choy and 1 Tbsp of oyster sauce.
Step 9
Stir-fry rapidly over high heat for just a minute or two, until the bok choy is slightly wilted but still crisp. Be careful not to overcook it, as it can become watery. A quick toss is all it needs to retain its vibrant color and satisfying crunch.
