Main Ingredients
  • 600g Aged Kkakdugi (well-fermented radish kimchi)
  • 1/2 stalk Green Onion
  • 2 Tbsp Grapeseed Oil

Seasoning Ingredients
  • 3 Tbsp Soy Sauce
  • 1 Tbsp Oyster Sauce
  • 1 tsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • 2 Tbsp Oligodang (corn syrup)
  • 1.5 Tbsp Sugar

Cooking Instructions

Step 1

Prepare the aged kkakdugi or well-fermented kkakdugi. Rinse it thoroughly under running water. Remove any outer leaves or dirty parts. If the kimchi is too sour, you can soak it in cold water for a short while before rinsing to moderate the sourness.

Step 2

Cut the rinsed kkakdugi into bite-sized pieces. Chopping the stems and leaves into appropriate sizes will give a good texture after stir-frying. Be careful not to cut them too small, as they might become mushy during cooking.

Step 3

Heat a stir-fry pan over medium heat. Add the finely chopped green onion and 2 tablespoons of grapeseed oil. Stir-fry for about 30-40 seconds until fragrant to create scallion-infused oil. This oil adds a wonderful depth of flavor to the dish.

Step 4

Add the prepared kkakdugi to the scallion oil. Pour in all the seasoning ingredients: 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon minced garlic, 2 tablespoons oligodang, and 1.5 tablespoons sugar. Turn the heat up to high and stir-fry quickly for about 3-5 minutes. It’s important to stir-fry vigorously so that the kimchi absorbs the seasonings well as it cooks. Adjust the sweetness by adding more or less sugar or oligodang according to your preference.

Step 5

Just before turning off the heat, drizzle in 1 tablespoon of sesame oil and sprinkle with toasted sesame seeds. Mix gently. Your delicious stir-fried aged kkakdugi with soy sauce is now ready! It’s especially wonderful served with warm rice.
