  • 90g fresh spring cabbage (Bomdong)

Seasoning (for 2 servings = approx. 6 portions)
  • 0.5 Tbsp minced garlic
  • 2 Tbsp soy sauce
  • 2 Tbsp anchovy sauce (fish sauce)
  • 2 Tbsp red chili flakes (Gochugaru)
  • 2 Tbsp rice syrup (Oligodang, adjust sweetness to taste)
  • 1.5 Tbsp sesame oil
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

First, carefully trim the tough bottom part of the spring cabbage with a knife, or gently separate it by hand. Then, carefully wash each leaf under running water to remove any dirt or debris.

Step 2

After washing, cut the spring cabbage into bite-sized pieces. To maintain a pleasant texture, it’s best to cut them into roughly 3-4 cm lengths. Consider cutting along with both the white stems and green leaves for enhanced flavor and texture.

Step 3

Place the prepared spring cabbage into a large bowl. Add all the seasoning ingredients: minced garlic, soy sauce, anchovy sauce, red chili flakes, rice syrup, sesame oil, and sesame seeds. It’s helpful to lightly mix the seasoning ingredients together before adding them to the cabbage.

Step 4

Now, gently toss the spring cabbage with the seasoning. To preserve the crisp texture of the cabbage, avoid over-mixing or squeezing. Instead, lightly lift and fold the ingredients from the bottom to the top, ensuring the seasoning is evenly distributed without bruising the leaves.
