We have 1 bunch of fresh wild chives (Dallae, about 100g), and for the seasoning: 1 Tbsp sugar, 1 Tbsp gochugaru (Korean chili flakes), 0.5 Tbsp minced garlic, 3.5 Tbsp soy sauce (Yangjo Ganjang), 1.5 Tbsp plum extract (Maesil Cheong), and finally, a touch of sesame oil and sesame seeds to finish.

Step 2

Since we eat the entire dallae, including the roots, it’s important to prepare them properly. Trim off any dirty roots or wilted leaves. Then, cut the dallae into bite-sized pieces, about 2 to 3 cm in length. Cutting them too long might make them difficult to mix, while cutting them too short could affect the texture, so aim for a moderate length.

Step 3

All the fresh dallae have now been chopped into convenient, bite-sized pieces. Look at those vibrant roots – they really whet the appetite!

After chopping, gently rinse the dallae several times under running water. Washing them carefully helps to preserve their fragrant aroma and thoroughly removes any dirt or debris. After rinsing, drain them well in a colander.
