Feeling hungry after your morning workout, but there’s no rice at home? Don’t worry! Today, I’m sharing a super simple Bibim Guksu (Korean spicy mixed noodles) recipe that anyone can make quickly. The addictive spicy and sweet sauce clings perfectly to the chewy noodles, awakening your appetite in no time. Whether you’re a student living alone or a beginner cook, you can create a satisfying meal in just 5 minutes!

Essential Ingredients
  • 200g somyeon (thin wheat noodles, serving for 1)
  • 1 hard-boiled egg (for topping)
  • 1/3 cucumber (julienned)
  • A small amount of cabbage (julienned)

Cooking Instructions

Step 1

First, prepare the crunchy elements by finely julienning the cucumber and cabbage. Having a hard-boiled egg ready will also provide a good source of protein for a more satisfying meal! (I happened to have one at home, so I used it.)

Step 2

Bring a generous pot of water to a rolling boil. Once boiling, add the somyeon noodles and gently loosen them with chopsticks. When the water starts to bubble over, add about one cup of cold water. Repeat this process once or twice to ensure the noodles become extra chewy. Drain the noodles immediately once they are cooked to your liking.

Step 3

Rinse the drained noodles thoroughly under cold running water. Gently rub them between your hands as you rinse, similar to washing your hair. This removes excess starch, resulting in wonderfully chewy and firm noodles.

Step 4

Place the well-rinsed, chewy noodles in a bowl. Add all the prepared Golden Sauce Mix ingredients and gently mix them together with your hands until the sauce is evenly coated onto the noodles. Finally, artfully arrange the julienned cucumber and cabbage, top with the hard-boiled egg, and sprinkle generously with sesame seeds. Your delicious and appetizing Bibim Guksu is now complete!
