The combination of a spicy and sweet special sauce with chewy smoked duck will make your mouth water. Main Ingredients
  • 1 pack (approx. 300-400g) Moguchon Smoked Duck Slices
  • 1/2 medium Onion, thinly sliced
  • 1/3 medium Carrot, thinly sliced
  • 1 handful Chives, cut into 3-4 cm lengths

Cooking Instructions

Step 1

To remove any gamey smell and make the smoked duck tender, briefly blanch the sliced smoked duck in boiling water for about 1 minute. Drain using a colander and let it cool slightly.

Step 2

In a bowl, combine 3 Tbsp gochugaru, 2 Tbsp gochujang, 1 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp mirin, 1 Tbsp minced garlic, and a pinch of ginger powder. Mix well to create a delicious sauce. If you don’t have ginger powder, a tiny amount of minced fresh ginger can be used.

Step 3

Add the blanched and cooled smoked duck slices to the prepared sauce. Gently mix with your hands, ensuring the sauce coats the duck evenly. Let it marinate for a few minutes to allow the flavors to meld.

Step 4

Wash the chives and cut them into approximately 3-4 cm lengths. Cutting them into larger pieces prevents them from becoming mushy when stir-fried.

Step 5

Peel and thinly slice the onion. Sliced onions will add sweetness and depth of flavor when cooked.

Step 6

Peel and thinly slice the carrot. Carrots add color and a pleasant texture to the dish.

Step 7

Heat a frying pan over medium-high heat. Add the sliced carrots and onions and stir-fry briefly until fragrant. Then, add the marinated smoked duck and stir-fry everything together. Be careful not to burn it.

Step 8

Once the onions become translucent, add the cut chives. Stir-fry briefly until the chives are just wilted. The key is to cook them quickly over high heat so they don’t become too soft.

Step 9

Transfer the well-cooked smoked duck bulgogi to a serving plate. Sprinkle with sesame seeds, if desired, for garnish. Enjoy your delicious Smoked Duck Bulgogi, perfect as a side dish or an appetizer!
