For the LA Galbi
  • 1kg LA Galbi (beef short ribs)
  • 2 Tbsp Cheongju (rice wine)
  • 8 slices fresh ginger
  • Pinch of salt
  • Pinch of black pepper
  • Vegetable oil, for cooking

For the Spicy Sauce
  • 4 Tbsp Gochujang (Korean chili paste)
  • 5 Tbsp Soy sauce
  • 2 Tbsp Worcestershire sauce
  • 4 Tbsp Brown sugar
  • 3 Tbsp Cheongju (rice wine)
  • 1/4 Tbsp Minced ginger
  • 2 Tbsp Minced garlic
  • 2 Tbsp Hot sauce
  • 1 Tbsp Toasted sesame seeds

Cooking Instructions

Step 1

Prepare the LA Galbi. First, soak the 1kg of LA Galbi in cold water for 1 hour to remove any excess blood. This crucial step helps eliminate any gamey flavors and ensures a cleaner, more refined taste.

Step 2

After soaking, thoroughly pat the LA Galbi dry with paper towels. In a bowl, combine the dried ribs with 2 Tbsp Cheongju, 8 slices of fresh ginger, a pinch of salt, and a pinch of black pepper. Gently massage the marinade into the meat and let it sit for 20 minutes to marinate. The fresh ginger not only adds aroma but also helps tenderize the meat.

Step 3

Now, let’s create the star of our dish – the spicy sauce! In a separate bowl, whisk together 4 Tbsp Gochujang, 5 Tbsp soy sauce, 2 Tbsp Worcestershire sauce, 4 Tbsp brown sugar, 3 Tbsp Cheongju, 1/4 Tbsp minced ginger, 2 Tbsp minced garlic, 2 Tbsp hot sauce, and 1 Tbsp toasted sesame seeds. Stir until the sugar is completely dissolved. This blend creates a rich, complex, and perfectly balanced spicy sauce.

Step 4

Heat a generous amount of vegetable oil in a pan over medium-high heat. Carefully place the marinated LA Galbi into the hot pan. Sear the ribs until the outer surfaces are nicely browned. This step is key to locking in the juices and ensuring a tender, flavorful result. Avoid overcooking at this stage; you just want to get a good sear.

Step 5

Once seared, generously brush the LA Galbi with the prepared spicy sauce. Place the sauced ribs on a baking sheet lined with parchment paper and bake in a preheated oven at 200°C (400°F) for 10 minutes. Remove from the oven, brush with a little more warm sauce, and bake for another 5 minutes until the glaze is slightly caramelized and the ribs are cooked through.
