Main Ingredients
  • Thinly sliced pork for stir-fry (Bulgogi cut) – 2 ‘geun’ (approx. 600g or 1.3 lbs)
  • 1 medium onion
  • A handful of green onions or scallions
  • 1 egg
  • 2 servings of warm cooked rice

Spicy Marinade
  • 3 Tbsp soy sauce (Korean ‘jin ganjang’ preferred)
  • 2 Tbsp sugar
  • 2 Tbsp corn syrup or rice syrup (‘oligo dang’)
  • Pinch of salt (for adjusting seasoning)
  • 2 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp spicy gochugaru (Korean chili flakes) (adjust to taste)
  • 5 Tbsp rice wine (mirin)
  • 1 packet (approx. 100ml) pear juice
  • 1 Tbsp minced garlic
  • 1/2 tsp grated ginger (or a pinch of ginger powder)
  • Pinch of black pepper
  • 1 Tbsp sesame oil
  • A sprinkle of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

In a bowl, combine 3 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp corn syrup, a pinch of salt, 2 Tbsp gochujang, 2 Tbsp spicy gochugaru, 5 Tbsp rice wine, 1 packet of pear juice, 1 Tbsp minced garlic, 1/2 tsp grated ginger, and a pinch of black pepper. Mix well with a spoon to create a flavorful Jeyuk marinade. (Taste and adjust sugar or salt according to your preference.)

Step 2

Add the prepared thinly sliced pork to the marinade. Gently massage the pork with your hands, ensuring the marinade coats every piece evenly. If you have time, let it marinate in the refrigerator for at least 30 minutes to allow the flavors to penetrate, making the pork more tender and delicious. (Marinating overnight is even better!)

Step 3

Slice the onion and chop the green onions. Heat a lightly oiled pan over medium-high heat. Add the marinated pork and stir-fry quickly until it’s almost cooked through. Then, add the sliced onion and chopped green onions, sprinkle with a little salt and pepper, and stir-fry just until the vegetables are slightly softened. In a separate pan, fry an egg sunny-side up to your preference (runny yolk recommended).

Step 4

Pack the warm rice into a bowl, then invert it onto a serving plate to create a neat dome shape. Arrange the delicious stir-fried Jeyuk generously around the rice. Place the sautéed onions and green onions on one side, and top with the sunny-side-up egg. Finish with a sprinkle of toasted sesame seeds for a visually appealing and tasty Jeyuk Deopbap!
