Spicy & Sweet Chewy Tteokbokki (One-Pan Recipe)

With more time spent at home due to current events, it’s easy for stress to build up, isn’t it? That’s when spicy food really hits the spot! This Tteokbokki recipe is incredibly simple to make, but its sweet and spicy flavor is guaranteed to relieve your stress. And the best part? It’s a one-pan recipe, meaning minimal cleanup!
Tteokbokki Ingredients
- 300g rice cakes (tteok)
- 1 handful of cabbage (approx. 100g)
- 1/2 stalk of green onion
- 1 Tbsp minced garlic (15g)
Sweet & Spicy Sauce
- 1 Tbsp gochujang (Korean chili paste)
- 3 Tbsp sugar
- 1.5 Tbsp gochugaru (Korean chili powder)
- 2.5 Tbsp soy sauce
- 1/2 tsp MSG (optional, but recommended for enhanced flavor)

Cooking Instructions
Step 1
First, let’s prepare the Tteokbokki sauce. In a wide bowl, combine 1 Tbsp gochujang, 1.5 Tbsp gochugaru, 3 Tbsp sugar, 2.5 Tbsp soy sauce, 1 Tbsp minced garlic, and 1/2 tsp MSG. Stir well until all ingredients are thoroughly mixed. (MSG is optional; the dish is delicious without it, but it significantly enhances the savory taste!)
Step 2
Chop the cabbage into bite-sized pieces, about 1cm wide. This will add a wonderful texture when eaten with the rice cakes.
Step 3
Pour 300ml of water into the pot or pan you’ll be using to cook the Tteokbokki. This water will form the base of our delicious sauce.
Step 4
Add 300g of rice cakes (tteok) to the pot. For the chewiest texture, it’s best to soak the rice cakes in cold water for 20-30 minutes beforehand. Soaking helps the tteok absorb the sauce better, making them even more delicious.
Step 5
Pour all of the prepared sauce into the pot with the rice cakes and cabbage. Stir everything together well to ensure the ingredients are evenly coated.
Step 6
Simmer over medium heat for about 6 minutes. The sauce will thicken as it reduces, allowing the Tteokbokki to absorb all that wonderful flavor. Remember to stir occasionally to prevent the rice cakes from sticking together.
Step 7
Finally, slice the green onion diagonally and add it to the Tteokbokki. Turn off the heat, give it a final stir, and voilà! Your stress-relieving, sweet and spicy, chewy one-pan Tteokbokki is ready to be enjoyed!^-^
