Main Ingredients
  • 1 squid (cleaned)
  • 1/2 onion
  • 1 stalk green onion
  • 2 king oyster mushrooms
  • 2 Korean chili peppers (cheongyang)
  • 1.5 Tbsp cooking oil
  • 60ml water

Stir-Fry Sauce
  • 2 Tbsp soy sauce
  • 0.5 Tbsp minced garlic
  • 1 Tbsp sugar
  • 1.5 Tbsp gochujang (Korean chili paste)
  • 0.5 Tbsp sesame seeds
  • 1 Tbsp sesame oil
  • 1 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions

Step 1

First, prepare the vegetables. Slice the onion and king oyster mushrooms into strips roughly the same length as the squid. Cut the green onion into large, approximately 5cm pieces. Remove the stems from the Korean chili peppers and thinly slice them.

Step 2

Rinse the prepared squid and pat it dry. Cut the squid into pieces similar in length to the vegetables. Avoid cutting them too small, as they will shrink when cooked.

Step 3

Heat a pan over medium-low heat and add 1.5 Tbsp of cooking oil. Add the large pieces of green onion and stir-fry until fragrant. Infusing the oil with green onion flavor will significantly enhance the dish.

Step 4

Once the green onion is fragrant, add the sliced squid to the pan. Stir-fry over high heat quickly. It’s important to cook the squid just until its surface turns white; overcooking will make it tough.

Step 5

When the squid is about halfway cooked, add 1 Tbsp of sugar. Stir-fry to add sweetness and a glossy finish to the squid. Be careful not to overcook at this stage.

Step 6

Now it’s time to add the sauce ingredients. Add 1.5 Tbsp gochujang, 2 Tbsp soy sauce, 0.5 Tbsp minced garlic, and 1 Tbsp gochugaru. Stir-fry everything together with the squid until well combined.

Step 7

Once the sauce coats the squid evenly, add the sliced king oyster mushrooms and onion. Continue stir-frying over high heat to maintain the vegetables’ crispness.

Step 8

Add 60ml of water to prevent the sauce from burning and to create a slightly saucy consistency. Stir-fry quickly over high heat to reduce some of the liquid.

Step 9

Finally, add the sliced onion and Korean chili peppers. Reduce the heat to medium and stir-fry just until the onion is slightly softened but still retains some crunch. This preserves their sweetness and texture.

Step 10

As the dish nears completion, sprinkle in 0.5 Tbsp of sesame seeds for a nutty aroma and mix gently.

Step 11

Just before turning off the heat, drizzle in 1 Tbsp of sesame oil. Gently swirl the pan or stir to coat everything evenly, ensuring the fragrant sesame oil doesn’t evaporate.

Step 12

Transfer the finished stir-fried squid to a serving plate. Sprinkle a little more sesame seeds on top for garnish. Enjoy your delicious and spicy stir-fried squid with a bowl of warm rice!
