I saw a mouthwatering pork stir-fry recipe on a blog and felt inspired! Instead of going out to eat, I decided to make it at home using some pork belly I had. I added some Korean chili peppers (cheongyang) for an extra kick, resulting in a wonderfully flavorful dish. This recipe is perfect for a quick and satisfying meal with minimal cleanup.

Once you have all your ingredients prepped, this dish comes together in a flash using just one pan! It’s a great way to reduce cleanup. Let’s get started with preparing the ingredients.

First, cut the pork belly into bite-sized pieces that are easy to eat. Next, finely chop the Korean chili pepper. Slice the green onion diagonally, about 1cm thick. Thickly slice the onion.

Heat a pan over medium-high heat and add the pork belly. Stir constantly with a spatula to prevent it from sticking together as it cooks and releases its fat.

Once the pork belly is partially cooked, add 1 Tbsp of mirin (rice wine) to help tenderize the meat and add a subtle sweetness. Stir well. Then, add 0.5 Tbsp of minced garlic and cook until fragrant.
