Ingredients
- 20 large fresh raw oysters
- 1 handful of thinly sliced radish
- 1 handful of thinly sliced pear
- 1/2 bunch of chives, cut into 4-5cm lengths
- 1 tbsp pine nuts (for garnish)
- 1 red chili pepper, thinly sliced diagonally
- 1 green chili pepper (like Cheongyang), thinly sliced diagonally
- 3 tbsp red chili powder (domestic)
- 1 tbsp minced green onion
- 1 tbsp minced garlic
- A pinch of minced ginger
- 1 tbsp anchovy sauce (for umami)
- A little salt (to taste)
- 1 tbsp sesame oil (for nutty aroma)
- 1 tbsp toasted sesame seeds (for finishing)
Cooking Instructions
Step 1
It’s crucial to clean the fresh oysters thoroughly. A great tip is to grate some radish, mix its juice with a little water, and then rinse the oysters in this mixture. This helps remove any fishy smell while cleaning them effectively. As you can see in the last photo, the water becomes quite murky, so rinse them multiple times until the water runs clear.
Step 2
These are the clean, bright white fresh oysters. Because they are large, mixing them with vegetables will create a generous and satisfying portion.
Step 3
Thinly slice the radish and pear into bite-sized pieces. Cut the chives into lengths of about 4-5cm. If you don’t have chives, you can substitute with water parsley or crown daisy. For a touch of elegance, thinly sliced raw chestnuts are also a wonderful addition. Slice the red and green chili peppers diagonally. Now, let’s prepare the seasoning: In a bowl, combine 3 tablespoons of red chili powder, 1 tablespoon of anchovy sauce, 1 tablespoon of minced garlic, a pinch of minced ginger, 1 tablespoon of minced green onion, 1 tablespoon of pine nuts, 1 tablespoon of toasted sesame seeds, and 1 tablespoon of sesame oil. Mix them well. (Note: Sesame oil was omitted in the photo but is essential for flavor!)
Step 4
Now, it’s time to mix everything together. First, gently toss the cleaned oysters with a little of the red chili powder to coat them with a beautiful color. Push the oysters to one side of the bowl and then lightly coat the sliced radish and pear with the remaining chili powder. This ensures each ingredient absorbs the flavors of the seasoning.
Step 5
Add the minced green onion, minced garlic, minced ginger, and anchovy sauce, and mix gently to combine. Finally, add the vibrant chives, red and green chili peppers, and the nutty pine nuts, and toss everything together thoroughly. Be gentle so as not to break apart the oysters.
Step 6
Finish by adding 1 tablespoon each of toasted sesame seeds and sesame oil, and give it a final light toss. Your delicious raw oyster salad is now complete!
