Simple Pot Rice
  • 2 servings Sushi Rice
  • Water (equal to rice volume)

Flavorful Pork and Kimchi Stew
  • 1 cup well-fermented Kimchi (aged kimchi)
  • 80g Pork (pork belly or shoulder recommended)
  • 1.5 cups Rice Water

Pan-Seared Pork and Fresh Salad
  • 100g Pork (tenderloin or sirloin recommended)
  • Fresh Lettuce
  • Crisp Carrot
  • Salad Dressing (to taste)

Cooking Instructions

Step 1

In a pot, combine the sushi rice and an equal volume of water. Bring to a boil over high heat. Once boiling, reduce heat to medium-low and cook until the rice is done. When the water has mostly evaporated, switch to very low heat and let it steam for 5-10 minutes.

Step 2

Tip: If you don’t have a pot lid, you can place a frying pan on top of the pot to press down the rice and help it steam effectively. Sushi rice cooks well and becomes fluffy.

Step 3

In a pot or pan for the stew, add the 80g of pork and the well-fermented kimchi. Sauté over medium heat until the pork is browned and the kimchi loses its raw smell, developing a richer aroma. This step is key for developing deep flavor.

Step 4

Once the pork and kimchi are well sautéed, pour in 1.5 cups of rice water. Rice water adds a smoother texture and a mild, savory depth to the stew.

Step 5

Bring the stew to a boil over high heat, then reduce to medium-low and simmer for 10-15 minutes. Allow the flavors of the kimchi and pork to infuse into the broth. Adjust seasoning based on the saltiness of your kimchi.

For the pan-seared pork, heat another frying pan and cook the 100g of pork slices until golden brown and cooked through on both sides. Ensure it’s cooked all the way to the center.
