Spicy & Fiery Cheongyang Pepper Tuna Stir-fry

Main Ingredients
  • 46 Cheongyang peppers
  • 1 can of tuna (approx. 150g)

Seasoning Ingredients
  • 3 Tbsp soy sauce
  • 3 Tbsp tuna extract/fish sauce
  • 1 Tbsp corn syrup or oligosaccharide
  • A pinch of sesame seeds
  • Canola oil or cooking oil, as needed

Cooking Instructions

Step 1

First, remove the stems from the Cheongyang peppers and wash them thoroughly under running water. Pat them dry, then roughly chop them with a knife or scissors. Transfer the chopped peppers to a food processor or chopper and mince them finely. (If you want an even spicier kick, you can leave some of the seeds in.)

Step 2

Heat a pan over medium heat. Add all the minced Cheongyang peppers to the pan. Then, add the canned tuna, draining most of the oil, or including a small amount of the tuna liquid if you prefer. (Including some tuna liquid adds umami, but too much will make the mixture watery when stir-frying, so adjust to your preference.)

Step 3

Now it’s time to add the seasonings. Pour in 3 tablespoons of soy sauce, 3 tablespoons of tuna extract (or fish sauce), and 1 tablespoon of corn syrup (or oligosaccharide). Finally, drizzle a generous amount of canola oil (or cooking oil) around the edges of the pan. The oil will help prevent the mixture from becoming too dry during cooking.

Step 4

Using a spatula or spoon, stir and stir-fry the ingredients in the pan, mixing them well. Especially, break up the tuna chunks as you stir-fry so the seasoning coats everything evenly. Continue to stir-fry over medium-low heat until most of the moisture has evaporated, being careful not to burn the ingredients. Stir-fry for about 5-7 minutes.

Step 5

This is the final step. Sprinkle a generous amount of sesame seeds over the stir-fried Cheongyang pepper and tuna mixture. Give it a final quick toss with your spatula to combine. Your delicious and spicy Cheongyang pepper tuna stir-fry is now complete! Let it cool slightly before transferring to a container for storage.
