Easy Kimchi Bibim-guksu: Your Weekend Special Dish
This is our family’s go-to dish every weekend! Introducing a simple yet incredibly flavorful Kimchi Bibim-guksu that’s sure to tantalize your taste buds.
Main Ingredients
- 50g well-fermented kimchi (finely chopped)
- 100g somyeon (thin wheat noodles, for one serving)
Cooking Instructions
Step 1
Bring a generous amount of water to a rolling boil in a pot. Once boiling, add the somyeon noodles and cook for about 3-4 minutes, or according to package directions. Stir occasionally to prevent the noodles from sticking together.
Step 2
Drain the cooked noodles and rinse them quickly under cold running water to remove excess starch. Drain thoroughly in a colander. This step ensures the noodles are chewy and won’t become mushy.
Step 3
Transfer the well-drained noodles into a large mixing bowl. Using a large bowl will make it easier to mix all the ingredients evenly.
Step 4
Finely chop the kimchi. Make sure it’s cut into bite-sized pieces for comfortable eating. If the pieces are too large, it can be difficult to mix and enjoy.
Step 5
Add the finely chopped kimchi on top of the noodles in the bowl. The spicy and crunchy kimchi is key to the delightful taste of bibim-guksu.
Step 6
Now, let’s add the delicious seasonings! Sprinkle the gochugaru, sesame seeds, soy sauce, and fragrant sesame oil over the noodles and kimchi. For an extra touch of flavor, you can add a little sugar or vinegar if you like.
Step 7
Using chopsticks or tongs, gently mix all the ingredients and seasonings together until well combined. Be careful not to break the noodles. Mix until the kimchi is evenly distributed and coated with the sauce. Enjoy your delicious bibim-guksu!
