Step 1

First, peel the potatoes thoroughly. Slice them into julienne strips, not too thinly, about the thickness of shredded radish. Cutting them this way will prevent them from breaking apart when stir-fried and maintain a good texture.

Step 2

Slice the onion into julienne strips, slightly thicker than the potatoes. If they are too thin, they can burn or become mushy easily, so cutting them a bit thicker than the potatoes helps balance the texture.

Step 3

Rinse the julienned potatoes under cold water to remove excess starch, then drain them completely in a colander. Leaving moisture behind can cause oil splattering during cooking and negatively affect the dish’s flavor.

Step 4

Heat 2-3 tablespoons of sunflower oil (or your preferred cooking oil) in a pan over high heat. Add the drained potato strips and stir-fry them quickly until the surface is lightly golden. Avoid stirring too frequently at this stage; this is a tip to prevent the potatoes from breaking apart.

Step 5

Once the potatoes are partially cooked, add the julienned onions and continue to stir-fry. Cook until the onions become translucent and release their sweet aroma. Season with 1 teaspoon of salt at this point. (Adjust the amount of salt to your preference.) Continue stir-frying over high heat.

Step 6

Now for the secret trick! Add 2-3 tablespoons of water, mix quickly, then cover the pan with a lid. Reduce the heat to medium-low and let it steam for about 2-3 minutes. This process ensures the potatoes are cooked through and tender inside, without becoming mushy or falling apart, maintaining a wonderfully soft texture.

Step 7

Turn off the heat, then add 1 tablespoon of sesame oil and a pinch of sesame seeds. Gently toss everything together to combine the ingredients and seasonings. Your delicious stir-fried potatoes and onions are ready! They taste great served immediately while hot, or you can let them cool to pack as a lunchbox side dish.
