Basic Ingredients
  • 1 pack soft tofu
  • 2 eggs
  • 200ml water steeped with kelp

Cooking Instructions

Step 1

First, to create a clear and flavorful broth, prepare 200ml of water steeped with kelp. You can soak the kelp in cold water for about 30 minutes or briefly in boiling water.

Step 2

Pour the prepared 200ml of kelp-infused water into a bowl. Crack in 2 fresh eggs, and add 1 tablespoon of tuna extract (or fish sauce) for a savory depth.

Step 3

Using chopsticks or a whisk, gently stir the eggs, tuna extract, and kelp water until well combined, creating an egg mixture. It’s best to mix gently to avoid creating too many bubbles.

Step 4

Now, prepare your cooking pot. Carefully add 1 pack of soft tofu to the pot, and then slowly pour the prepared egg mixture over the tofu.

Step 5

Place the pot over medium heat and let it simmer for about 2 minutes. As the egg mixture begins to set, use a spoon to gently break the tofu into bite-sized pieces. You can also lightly stir the egg mixture at this point to create a soft, fluffy texture.

Step 6

Once the tofu and egg are partially cooked, cover the pot with a lid and continue to simmer for another 2 minutes. This step ensures that the tofu and egg are cooked through and become wonderfully tender, while allowing the flavors to meld.
