  • 1 Onion (sliced)
  • 2 Scallions (diagonally sliced)
  • 1 King Oyster Mushroom (sliced into bite-sized pieces)
  • 3 Cheongyang Peppers (optional, for extra spice)

Cooking Instructions

Step 1

For the pork, thinly sliced pork shoulder is preferred over thick cuts as it becomes much more tender and absorbs the marinade better, resulting in a tastier dish. Gently separate the slices by hand to prevent them from sticking together. This ensures the marinade coats every piece evenly, enhancing the flavor.

Step 2

Now, let’s make the delicious sauce for the stir-fried pork! In a bowl, combine 3 Tbsp Gochujang, 4 Tbsp Gochugaru, 5 Tbsp minced garlic, 5 Tbsp soy sauce, 2 Tbsp maesil cheong, 2 Tbsp sugar, and a pinch of black pepper. Mix thoroughly with a spoon until all ingredients are well combined and there are no lumps. While aging the sauce beforehand can deepen the flavor, it’s delicious even when used immediately.

If you prefer a spicier dish, add 3 Cheongyang peppers, also sliced. You can also mix in some spicier gochugaru or add more chili peppers to suit your taste for a more fiery Jeyuk Bokkeum.

Now, let’s start stir-frying! Add the marinated pork to a heated pan. To prevent sticking and ensure even cooking, pour in about 1/2 cup (approx. 100ml) of water and stir-fry over medium heat. A small amount of water helps the pork cook tenderly while allowing the sauce to thicken and become more flavorful. Continue to cook until the vegetables are tender and the pork is fully cooked through.

Finally, just before turning off the heat, drizzle 1 Tbsp of sesame oil around the edges of the pan to release its aroma and enhance the flavor. Sprinkle a generous amount of toasted sesame seeds for a nutty crunch and visual appeal. Your delicious stir-fried pork is now ready to serve!
