- 1 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp gochujang (Korean chili paste)
- 1/2 Tbsp sesame oil
- A pinch of toasted sesame seeds
- 1 Tbsp vinegar

- 1/2 tsp salt

Cooking Instructions
Step 1
First, prepare your fresh garlic scapes. Gently rinse them under running water. Trim off the tough ends and the thicker bottom parts. Then, cut them into bite-sized pieces, about 5cm (2 inches) long.

To ensure a crisp texture, the cut garlic scapes undergo a special washing process. Fill a bowl with enough water to cover the scapes and add 1 tablespoon of vinegar. Submerge the cut garlic scapes in this vinegar water for 5 minutes to help remove any dirt. Afterwards, rinse them thoroughly under running water several times to clean them completely.
Step 3
Now it’s time to blanch the garlic scapes for maximum crispness. In a pot, bring 800ml of water to a boil over high heat. Add 1/2 teaspoon of salt to the boiling water. Once the water is vigorously boiling, carefully add the prepared garlic scapes. Blanch them for only 30 seconds – be precise with the timing, as overcooking will make them soft and lose their crunch.
Step 4
Immediately after blanching, transfer the garlic scapes to a bowl of cold running water. This rapid cooling helps to preserve their crisp texture. Once they are completely cooled, drain them well in a colander, shaking off as much excess water as possible. Excess moisture can dilute the sauce and make the dish less flavorful.
