- 3 Tbsp Water
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Soy Sauce
- 1 Tbsp Plum Extract (or syrup)
- 1 Tbsp Brown Sugar
- 1 Tbsp Sesame Oil
- 1 Tbsp Minced Garlic
- 1/2 Tbsp Gochugaru (Korean chili flakes), fine ground
- A pinch of Toasted Sesame Seeds (for garnish)
- 3 Tbsp Water
Cooking Instructions
Step 1
First, trim the bottom ends of the king oyster mushrooms. Rinse them lightly under running water and pat them dry. Slice them into thick pieces, about 1 to 1.5 cm thick. Slicing them too thinly might cause them to lose too much moisture and become less chewy when cooked.
Step 2
Now, let’s make the delicious gochujang marinade. In a bowl, combine 2 Tbsp gochujang, 1 Tbsp soy sauce, 1 Tbsp sweet plum extract (or syrup), 1 Tbsp brown sugar, 1 Tbsp savory sesame oil, 1 Tbsp minced garlic, and 1/2 Tbsp of finely ground gochugaru for a touch of mild spiciness.
Step 3
Add 3 Tbsp of water to the bowl to help create a smooth sauce. Stir everything together thoroughly with a spoon or a whisk until well combined. Your flavorful gochujang marinade is ready! This amount of marinade is sufficient for about 4 king oyster mushrooms, so keep that in mind.
Step 4
Coat the prepared king oyster mushrooms evenly with the marinade. Ensuring every piece is well-covered will allow the flavors to penetrate deeply, making them even more delicious. Alternatively, you can pour the marinade into a pan, gently simmer it over low heat, and then add the mushrooms. This method helps prevent the marinade from burning and ensures the mushrooms cook evenly.
Step 5
Lightly grease a preheated pan with a little oil. Place the marinated mushrooms in the pan and cook over low heat. Grill them, turning occasionally, until they are nicely browned on both sides and the sauce has thickened, being careful not to burn the marinade. If the sauce becomes too thick during cooking, you can add a tiny bit more water. Once cooked, sprinkle with toasted sesame seeds for a final touch of nutty flavor and appealing presentation. Your delicious spicy and sweet grilled king oyster mushrooms are ready!
