Main Ingredients
- Dried Shredded Squids (Japchae-yong) 300g (1 standard pack)
Spicy & Sweet Sauce
- Gochujang (Korean chili paste) 2 Tbsp
- Soy Sauce 2 Tbsp
- Oligosaccharide (or corn syrup) 4 Tbsp
- Sesame Oil 2 Tbsp (1 Tbsp for the sauce, 1 Tbsp for finishing)
- Toasted Sesame Seeds 1 tsp
- Gochujang (Korean chili paste) 2 Tbsp
- Soy Sauce 2 Tbsp
- Oligosaccharide (or corn syrup) 4 Tbsp
- Sesame Oil 2 Tbsp (1 Tbsp for the sauce, 1 Tbsp for finishing)
- Toasted Sesame Seeds 1 tsp
Cooking Instructions
Step 1
First, prepare one standard pack (300g) of dried shredded squids. Using scissors, cut the squids into bite-sized pieces, about 5-7cm in length. Cutting them makes them easier to eat, as they can be quite long. Gently separate any clumps of squid.
Step 2
In a wide wok or frying pan, combine all the sauce ingredients. Add 2 Tbsp of gochujang, 2 Tbsp of soy sauce, and 4 Tbsp of oligosaccharide (or corn syrup) to the pan.

Using a spatula or spoon, thoroughly mix the sauce ingredients in the pan. Stir until the gochujang, soy sauce, and sweetener are smoothly combined without any lumps.

Now, turn the heat to low or medium and bring the sauce to a gentle simmer. Once it starts bubbling, let it cook for about 1 minute to slightly thicken the sauce. This step helps deepen the flavors.
Step 5
Once the sauce is simmering nicely, immediately turn off the heat. Add the prepared dried shredded squids to the pan while the heat is off. Quickly toss them to coat evenly with the sauce. While mixing, gently separate the squids to ensure each strand is coated.

Continue to toss and mix the squids with the sauce using a spatula until they are evenly coated and become glossy. Ensure the squids absorb the flavors well without becoming too tough. Mix thoroughly to achieve a uniform coating.
