Main Ingredients
  • 1 whole chicken (for Dakbokkeumtang)
  • 1/2 onion
  • 1 large potato

Seasoning
  • 5 Tbsp soy sauce
  • 5 Tbsp gochujang (Korean chili paste)
  • 5 Tbsp sugar
  • 4 Tbsp gochugaru (Korean chili flakes)
  • 1/2 stalk green onion
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

First, rinse the chicken thoroughly. Blanch it in boiling water for about 1-2 minutes to remove any impurities and gamey smell. Drain the chicken and rinse it under cold water. Place the blanched chicken in a pot with 1.5 cups of water. Add the soy sauce, gochujang, sugar, and minced garlic. Stir well to combine. Add the roughly chopped potato and onion to the pot.

Step 2

Place the pot on the stove over high heat and bring to a boil. Once boiling, add the diagonally sliced green onion and gochugaru. Cover the pot with a lid. Reduce the heat to medium and simmer for about 15 minutes. Then, lower the heat to low and let it simmer gently for another 20-30 minutes, until everything is tender and the flavors have melded. It’s important to taste the sauce periodically and adjust the seasoning to your preference. The amount of soy sauce, gochujang, and sugar might need slight adjustments depending on the specific brands you use, as they can vary in sweetness, saltiness, and spiciness. For an extra touch, you can add mushrooms or soaked glass noodles. The sauce is quite flavorful and can accommodate additional ingredients well.

Your delicious Dakbokkeumtang is ready! The chicken and vegetables are tender and infused with a rich, savory, and slightly sweet flavor. If you prefer a chewier texture, you can use a tougher breed of chicken like a native Korean chicken (tojongdak). For a more tender result, a standard broiler chicken works beautifully.
