Main Ingredients
- 150g small dried anchovies
- 9 Cheongyang chili peppers (Korean hot peppers)
Seasoning
- 0.5 Tbsp soy sauce
- 1 Tbsp fish sauce (or tuna extract)
- 2 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp minced garlic
- 1 Tbsp cooking wine (mirin)
- 0.5 Tbsp soy sauce
- 1 Tbsp fish sauce (or tuna extract)
- 2 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp minced garlic
- 1 Tbsp cooking wine (mirin)
Cooking Instructions
Step 1
Heat about 1-2 tablespoons of cooking oil in a pan over medium heat. Add the minced garlic and stir-fry gently until fragrant and lightly golden. Be careful not to burn the garlic.
Step 2
Once the garlic is fragrant, add the small dried anchovies to the pan and stir-fry together. When the anchovies are slightly warmed, add the Cheongyang chili peppers, thinly sliced diagonally after removing their stems. Pour in the soy sauce, fish sauce, and cooking wine, ensuring the seasoning coats the ingredients.
Step 3
Adding a little more oil to the pan will make the anchovies crispier and more delicious. Reduce the heat to medium and stir-fry for about 5-7 minutes, allowing the seasoning to evenly coat the anchovies and peppers. This will result in a glossy and flavorful dish. Stir in the oligosaccharide at the end for added sweetness and shine. Enjoy your perfectly stir-fried anchovies!
