Sundae Guk Ingredients
  • 600ml Beef bone broth
  • 400g Frozen sundae (Korean blood sausage)
  • 1/4 Onion, thinly sliced
  • Small bunch of chives, cut into bite-sized pieces
  • Small amount of green onion, chopped

Spicy Sundae Guk Seasoning Paste (Dadaegi)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Saeujeot (salted shrimp)
  • 1 Tbsp Minced garlic

Cooking Instructions

Step 1

First, let’s prepare the seasoning paste (dadaegi) for a delicious Sundae Guk. In a bowl, combine 1 tablespoon of gochugaru (Korean chili flakes), 1 tablespoon of saeujeot (salted shrimp), and 1 tablespoon of minced garlic. Mix them thoroughly. Letting this paste rest in the refrigerator for about a day allows the gochugaru to fully hydrate, resulting in a richer and more complex flavor. If you’re short on time, you can use it immediately!

Step 2

It’s important to thaw the frozen sundae before cooking. You can lightly microwave it for 1-2 minutes, or let it thaw naturally at room temperature. Once thawed, cut the sundae into bite-sized pieces (about 2-3 cm), being careful not to let it get too mushy.

Step 3

Now, it’s time to boil the broth. Pour 600ml of beef bone broth and 400ml of water into a pot. Place it over high heat and bring the broth to a rolling boil with the lid off.

Step 4

Once the broth is boiling vigorously, add the thinly sliced onion and the prepared sundae. After the soup starts to bubble again with the sundae in it, reduce the heat to medium-low, cover the pot, and simmer for about 5 minutes. Be careful not to overcook the sundae, as it can become soft and lose its chewy texture. Turn off the heat once the sundae is cooked through.

Step 5

Finally, it’s time to add the finishing touches! Ladle the hot Sundae Guk into serving bowls. Generously top with the cut chives and green onions. (If you like, adding perilla powder will also be delicious!) Lastly, adjust the seasoning to your liking by adding the prepared dadaegi and saeujeot.
