  • Doenjang (fermented soybean paste) or Doubanjiang 1/3 Tbsp
  • Soy sauce 1.5 Tbsp
  • Cooking wine (Mirin) 1 Tbsp
  • Fish sauce 1 Tbsp

Step 1

We’ve gathered a variety of ingredients today for a rich and flavorful Kimchi Mandu Jeongol. Fresh ingredients are the foundation of a delicious hot pot!

Step 2

First, let’s prepare a deep and refreshing broth using 2 packs of Dapori broth base. (Boil the packs in about 600ml of water. You can also use anchovy-kelp broth.) This will form the flavorful foundation of our dish.

Step 3

Trim the tough ends of the assorted mushrooms meant for hot pot. Separate them into bite-sized pieces or slice them. They will add wonderful texture and earthy flavor.

Step 4

Chop the aged kimchi into manageable pieces. Slice the green onion diagonally to add a fresh, aromatic touch. Rinse the bean sprouts under cold running water to make them crisp and refreshing.

Step 5

Thinly slice the onion to add sweetness and depth. Cut the firm tofu into bite-sized cubes. With all our ingredients prepped, we’re ready to assemble!

Combine 1 Tbsp sugar, 1.5 Tbsp gochugaru, 1 Tbsp minced garlic, 1/2 Tbsp paprika powder (for color and mild flavor), 1/3 Tbsp Doubanjiang (for umami!), 1.5 Tbsp soy sauce, 1 Tbsp cooking wine, and 1 Tbsp fish sauce. Mix well until thoroughly combined. This paste is key to the signature taste of the hot pot.

Arrange the prepared kimchi, mushrooms, bean sprouts, onion, tofu, and dumplings beautifully in your hot pot. Place the seasoning paste in the center and carefully pour the 600ml of prepared broth over everything.
