How to Make Delicious Kimchi Bibim Guksu at Home
On hot days, a cool and spicy bowl of Bibim Guksu will awaken your appetite. This recipe is simple yet guarantees a delicious result that anyone can enjoy.
Main Ingredients
- 1/4 head of well-fermented kimchi
- 5 lettuce leaves
- 2 servings of somyeon (Korean wheat noodles, approx. 200g)
- 4 boiled eggs (optional, for garnish)
- 1/4 cucumber
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
This recipe for spicy Kimchi Bibim Guksu is incredibly simple, yet it guarantees a flavor comparable to what you’d find at a restaurant. It’s the perfect dish when you lose your appetite on a hot day!
Step 2
While the somyeon noodles are cooking, finely chop the kimchi. In a bowl, combine the chopped kimchi with all the seasoning ingredients and mix well by hand, allowing the flavors to meld. Pre-seasoning the kimchi this way will result in a much tastier noodle dish later.
Step 3
Prepare the main sauce for mixing with the noodles. To the chopped kimchi, add 1 tsp gochugaru, 2 tsp gochujang, 1/2 tsp sugar, and 1 Tbsp sesame oil. Gently mix everything together with your hands until well combined. Adjust the sugar quantity based on the sourness of your kimchi.
Step 4
Prepare the garnishes. Wash the lettuce leaves thoroughly, pat them dry, and then cut them into bite-sized pieces. Wash the cucumber, peel if desired, and julienne it thinly. Halve the boiled eggs for a beautiful topping.
Step 5
Now, it’s time to cook the somyeon noodles. Boil the noodles in plenty of water for about 3-4 minutes, or until al dente. It’s important to stir them occasionally to prevent sticking. Once cooked, drain the noodles in a colander and lightly shake off the excess water, but do not rinse them with cold water (rinsing can make the noodles break apart).
Step 6
Place the drained, still-warm somyeon noodles into the bowl with the pre-seasoned kimchi. Add the prepared lettuce and cucumber. Gently toss everything together with your hands, ensuring the noodles and kimchi are evenly coated with the delicious sauce. This thorough mixing is key to the dish’s flavor.
Step 7
Your delicious Kimchi Bibim Guksu is now ready to serve! Arrange it attractively in a bowl and garnish with the boiled egg halves and a sprinkle of toasted sesame seeds for an extra touch. This dish is perfect for a weekend lunch or a simple, satisfying dinner.
