- 2 Tbsp chopped green onions
- 2 Tbsp finely julienned carrots

Step 1
First, gently crack 3 fresh eggs into a clean bowl or a wide plate. A wide bowl that allows for easy mixing of the yolks and whites is ideal.
Step 2
Add 2 Tbsp of finely julienned carrots and 2 Tbsp of chopped green onions (or scallions) to the bowl with the eggs. The carrots add a beautiful color to the omelet, while the onions prevent it from being bland and enhance its flavor. Whisk the eggs thoroughly with chopsticks or a whisk, breaking down the chalazae (the white stringy bits). It’s important to mix until the yolks and whites are completely blended.
Step 3
Now, pour a thin layer of the beaten egg mixture onto a lightly oiled pan heated over medium-low heat. Once the egg is about 70% cooked, carefully roll it up from the bottom. Don’t worry if the first roll isn’t perfect. After rolling up the first section, pour more egg mixture into the empty space and continue rolling as it cooks. Repeating this process will create a thicker and more beautiful rolled omelet. Use up all the egg mixture and cook thoroughly until golden brown. Slice the beautifully finished three-color rolled omelet into bite-sized pieces and enjoy with warm rice!
